
I flew to Dallas for the weekend to visit with Ginan. Friday night we stopped in at a ... to have a light dinner. We stayed up chatting until 4AM!! Saturday morning we left the house (a little bleery eyed) at 9AM to go to Central Market Cooking School for a class: "Pastry Basics: Pies and Tarts". The chef taught us some really cool tricks with three different pie and pastry doughs. We worked with a basic pie dough, Pate Brisee, and Pate Sucree. The best part?

Eating our creations! Of course, I also left with a long list of must haves for pastry making: Whole nutmeg, microplane, granite rolling surface, and a digital scale. We had Pho (soup) at a Vietnamese restaurant that night and returned to her house to chat (until 2AM this time.)
